Sunflower Bean Curd in Laohuibin


Started in 1929, Laohuibin Restaurant sits on Sanmin Road, near Liuduqiao, the downtown. The restaurant is notable for Hubei dishes that absorb the strongpoint of Beijing and Suzhou delicacies as well. The most famous dish, sunflower bean curd is a specialty of the twin brothers, Zong Liangzhi, the master chef and Zong Liangsong, the senior chef. They were formally apprenticed to Hu Chengpan, a master in cooking in 1940s to learn how to cook the top grade bean curd of a unique style. Firstly, remove the skin of a fresh bean curd. Then mash it and add some minced fish meat, shrimp meat and hams. After exquisitely cooked, it is such a top grade dish, though named bean curd that it swept the three towns of Wuhan. A lot of gastrologists also came especially to this restaurant to order the bean curd. The chefs, constantly perfecting their cooking techniques, developed another design for bean curd, i.e., to put some shredded fried egg paste, and decorate with green vegetable leaves around so that it looks like a sunflower, which is also why the bean curd is named so. A couple of Tianmian natives who showed great interest in this dish, made a poem after tasting it. It said: the sunflower bean curd will always remind me of Laohuibin. After tasting the Hubei dishes with much local flavor, I feel more close to the native people there.
