Sponge Rice Cakes


Sponge Rice Cakes are also called twin cakes (or baba by children) for they are sometimes sold in pairs. They are introduced into Wuhan from Jianghan Plain and become a famous breakfast favored by local citizens. The working procedure of sponge rice cakes is as follows: grind rice into slurry and leaven it. Mix flour, white sugar and soda and then bake the mixture with it till it is well done. The outside part of the cakes looks golden and taste crisp, while the inner part is while and tastes soft and smooth. For their daintiness and cheapness, they are served all over Wuhan.
